Chocolatier Andrea Bianchini: The Return

Inside the bustling environment of Mercato Centrale, the long-established Tuscan chocolatier and artisan, Andrea Bianchini, has just settled into a new space, returning to the city center after a long absence.
Working for years in the Sant Ambrogio area on Via de’Macci, then Via Gioberti and later in Calenzano, Bianchini developed a strong philosophy centred on high quality craftsmanship and meticulous work. From the selection of ingredients to the tempering of chocolate, every stage of the production is executed diligently and precisely – a standard that brought him industry recognition in 2008 as the best Italian chocolatier.
Bianchini’s chocolates offer an authentic and inventive tasting experience, with flavours such as olive oil, rosemary and sage reflecting both his chef background and the Tuscan culinary tradition. Favourites include the coconut and rum pralines alongside classic hazelnut chocolates.

Beyond his signature chocolates, displays of delicate cakes, tarts and biscuits line the counter with their pistachio, tiramisù and soft cream fillings once more offering a nod to beloved Italian classics.
In honour of this year’s International Women’s Day from Friday, March 6 to Sunday, March 8, Bianchini will be selling mimosa-shaped pralines at the new Mercato Centrale stall.
The distinct yellow flower, budding yearly in early March has symbolised the resilience, strength and solidarity amongst women in Italy since 1946. Introduced by the Unione Donne Italiane in the aftermath of the Second World War, the mimosa was chosen as the official symbol of the day. The flower’s seasonal abundance and accessibility across Italy made it both a practical and powerful emblem. Since then, it has been gifted to women across the nation every International Women’s Day.
The floral chocolates transform this important tradition into something edible and indulgent. Flavoured with a pineapple and cream filling, the chocolates offer a sweet reminder of the importance of the day.
Andrea Bianchini’s stall in Mercato Centrale is open daily from 9 am to 11 pm, with extended hours until midnight on Fridays and Saturdays. (Aniela Cabut)
